Simple Supper Suggestions #23

Super Simple Meals for your week!

Happy Monday! I am so sorry I am a day late, but unfortunately I have been under the weather with some weird GI issues. Hoping to get back to normal this week, but I am not gonna lie, this was a hard one for me to do because food just sounds blah to me! But I did it! A day late and a dollar short….But by God I did it!

So here is what I THINK I will make this week. Who really knows as I am just not in the mood.

Monday-Amy’s Tortilla Soup This delicious recipe I got from my amazing neighbor Amy, I like to call her Pei Wei, and it is so good! I love making it on a Monday night for the family and eating on the left overs all week with a side of avocado! So good and the thought of soup with my stomach makes me happy.

Tuesday- Tuesday is always Tacos of some sort! This week they will be baked!

Wednesday-JP’s pick of Chicken Feta. Again super easy and you can even make it super duper easy by going to the grocery and getting their whole chickens that are already roasted if you are crazy busy with kid activities or if you are like me and behind or under the weather!

Thursday- we will finish the week out with one recipe that is silly easy and one that both JP and Graeme love! It is so great to use at tailgates like my friend Lyndsy does or brunches or anywhere you have a crowd! And it is B for D! Hawaiian Rolls with Ham and Cheese!!!!!!

So there you have it folks! Four meals and one that is a little bonus recipe for your future tailgates! Will we even have those this year?!

Bon Appetit!

Simple supper suggestions for your week.

I am so excited to report that I have been getting all kinds of positive feedback on my Simple Supper Suggestions that I have decided I am going to keep on keeping on with the the process! You guys have made it clear that this helps your home life and in reality it does help mine to plan! So I owe you all a HUGE THANK YOU! This week in the Berry Home we will be doing something a little different on Sunday simply because it is a holiday weekend and I do not want to “really” cook! Anyone feel me? If so you will totally understand, if not, I promise it is still good! What is it you ask? Check it out below!

Sunday-Stouffer’s Lasagna! You cannot go wrong with this bad boy! Just add a salad from a bag, frozen garlic bread, and the entire house will be thrilled! Trust me!

Monday-With it being Labor Day the Berry’s will be grilling, but I do have some excellent salads to go along with anything on the grill. Check them out here: Asian coleslaw that is so good and so easy! My friend Laura’s Beau Monde salad is to die for! And you can never go wrong with some Mexican Corn!

Tuesday-Taco Tuesday! Who doesn’t like Tacos on Tuesday? This recipe offers a little twist! Take a look!

Wednesday-Christmas Morning Casserole! B for D is always a hit in my house! Don’t let the title scare you! It is just what we eat every christmas morning at the Berry house!

Thursday-Day 4: Grubba’s Meatloaf: So my father in law was in the Air Force and legend has it when he would come home from being away and he would send my mother in law to her parents for a little time away to rest up after being with three crazy boys ALONE for long periods of time. 20 Years in the air force will do that! Thank you Grubba for your Service! Point is he got REALLY good at meat recipes….Boys love their meat and potatoes! This recipe right here is super easy, super good, and if you have children that are scared of meat in a loaf, trust me it is a thing, just call it meatball meat! For some odd reason wording it differently does the trick! Who knew?

That is what I will be cooking this week! What will you be cooking?

OH! BIG NEWS!

I am also cooking something else up! My JOURNAL is finally going to print and my pre order link is up and working! Here is the deal….it has not printed yet so I have zero examples to show you, BUT what I do have to show you is the cover! The art was done by Will! My oldest son! This mama could not be more proud!!!!!! Take a look! And the first 50 to order will be invited to a night with me and some of my favorite gals! It will be zoom of course so even if you are in Africa, you can still join us for some fun, wisdom, love, and a little dance party! Are you in? If so, order here The Good Life Journal Pre Order link!

Until Next Time!

Simple Suppers #21

Simple meals for the busy family.

Day Late and a Dollar Short! But I am here with Simple Suppers for your week….better late than never! As always we started with Spaghetti Sunday! If you missed last week you do not know that the rule in the Berry Casa is mom cooks Sunday-Thursday and takes Friday and Saturday off! It really works well for us and it is super easy for me because 99% of the time we have Spaghetti Sunday which is quick, easy, and everyone loves it! If I ever get my act together I will get this post out on Saturday and you guys too can partake in Spaghetti Sunday! I promise the kids love it and Trey really loves it! It literally has been a tradition for Trey and I since our dating days back in 1992! He said it feels like home to him. I love that! What meal feels like home to your family? Maybe you guys can start our tradition! I promise it is a tradition that really promotes conversation….something lacking in this world of electronics!

So what are we cooking this week?

SUNDAY: We cooked Spaghetti Sunday It is simple, quick, and a huge crowd pleaser!

MONDAY: Chicken and Rice Soup I really like making soup, sandwiches, and salads on Monday nights because what that does is it leaves me with soup to eat on all week at lunch- which is a lot healthier than any drive through. I don’t do it every week because I like to keep the family on their toes, but I think I would if someone told me they LOVED having soup! Ha!

Tuesday: Tacos via the crock pot which is always a life saver especially on those busy sports nights!

WEDNESDAY: This Wednesday is the amazing Audresha Lynn and I’s cooking show! Tune in live at 5:30 PM CST to see what we will be cooking up! I don’t know what it is yet so I do not have a recipe for ya yet! But I do have you covered! Why don’t you try my Turkey and Squash? This along with my feta chicken is one of JP’s favorite meals I make. It is so easy and so good and do you want to know what else? It is super healthy! #winning

THURSDAY: Steak Burrito Bowl This is such a delicious bowl I make. Graeme really loves it! I think your kids will too and you will love how easy it is and versatile!

So that is what we will be cooking in The Berry home this week! What’s cooking in your world?

Bon Appetit!

I am literally sitting in my Dad’s hospital bed right now typing this and the funniest thing just happened….I was singing the Texas A & M fight song, because it is College Football Saturday, and my pops looked annoyed….So I said, “You wish Robin was here right about now, don’t ya?” Robin is my sister for those of you who do not know, and he LITERALLY said, “No. Not necessarily, I just wish you would shut up!?” I about fell out of the bed! But hey! That is a great sign that he is still witty!

So truth be known I have not cooked in about 2 weeks since my father’s fall. Thank God for friends bringing meals and Trey’s ability to cook! They have all saved me and fed my kids which has been glorious and a major weight off my shoulders!!!! But, if this is what life is going to throw at me it is time I adjust so I am going to do a meal plan this week of super easy meals that can be thrown in a crockpot or whipped up super duper fast!

Sunday will still be Spaghetti Sunday as just last night I was at my friend Amy’s house and her sweet daughter Caroline literally said, “I want to come to Spaghetti Sunday!” Yall! Do you know what that did for my ego! First off the fact that a high school girl is reading my blog!!!! Well, that touched me to the core! And second the fact that any high school kid might think my house if fun!!!!! Dude that is huge! So you better believe I will not let that tradition go!

IMG_0986.jpg

Monday-Blueberry Salmon This meal is so good and perfect for this time in my life because Trey is in charge of the grill! Ha! All I have to do is make sure to make the rice!!! Easy Peasy!

Simple Supper Suggestions (10).jpg

Tuesday-Crockpot Tacos!!!! You know us! We gotta have tacos on Tuesday and thank God for the crock pot! These tacos are so versatile and everyone loves them!

Untitled design (16).jpg

Wednesday- Red Beans and Rice Again I need the crock pot with life right now. This recipe is super easy and everyone loves it and it makes for nice left overs!!!!

Simple Supper Suggestions (22).jpg

Thursday-Halloween! Our street always gets together and this year we are doing a tex mex theme so I will be making my neighbor Amy’s Tortilla Soup! It is so good and so easy and every crowd loves it!

Simple Supper Suggestions (23).jpg

Friday and Saturday! I am off….Course I feel really guilty because I have pretty much been off since my Dad’s fall on October 11, but I know not to beat myself up too much as this is just a season and one that God is growing me in gracefully!

Untitled design (14).jpg

What will you be cooking this week? And if you have any crock pot meals could you help a sister out and send them my way?

Until next time,

Bon Appetit!

Tuesday is always Tacos of some sort! This week they will be baked!

IMG_9960.jpg

Wednesday we will have turkey bolognese and I give you ideas on how to make this uber healthy and then not so healthy with regular noodles. This dish is always a crowd pleaser.

So you can make this dish uber healthy or with regular noodles like I did above….click the link to see both ways.

So you can make this dish uber healthy or with regular noodles like I did above….click the link to see both ways.

Thursdays have become our B for D night as we are now helping a friend out with his little girl and I am still learning what she likes. I have officially learned she does not like noodles so lasagna is out, spaghetti is out, anything with a noodle is out and last week when I had no options for her but breakfast food she got super excited so this week we will have French Toast, whip cream, and berries with some bacon on the side. For my French Toast all I do is get eggs, a little vanilla extract, some cinnamon, sugar, and heavy whipping cream. Whisk all that together and add simple white or wheat bread and cook on the frying pan with butter in the pan. So good!!!!! And everyone is happy!!!!

Simple Supper Suggestions #10

This week we are pretty busy, honestly typing that cracks me up, because truth is we are ALWAYS busy so scratch that! Point is I am going to have Trey grill a TON of chicken to make my life easier throughout the week. Our weekend has been chalk full of sports, college visits, and conventions that the last thing I want to think about is a creative dinner schedule so when times like this happen I just buy a ton of chicken thighs, marinade them, Trey grills them, and that is my back up plan when things get overwhelming. They are quite delicious too and silly easy. I think you might really appreciate this recipe!

But! First things first!

Spaghetti Sunday! You know the drill if you have been around here long and if not, I think you might like the idea so check it out!

Love when our table is full of chaos and love!

Love when our table is full of chaos and love!

Monday night will be the night we grill the chicken. All I do is buy a ton of thighs and throw them in a gallon zip lock bags and marinade them in this Italian dressing! That is literally it! When you are ready throw them on the grill and cook to the right temperature. On this particular night I will serve the thighs with the amazing salad I blogged about last week and my rice. So easy and everyone is happy.

Rice:

This rice is so easy to make. All it requires is 2 cups of white rice. Put that in a medium sauce pan. Add 4 cups of chicken broth. Bring that to a boil. Once it is boiling turn it to simmer and place a few lemon slices on top and sprinkle with Lawrys Season Salt. Cover and let simmer for 15 minutes. DO NOT STIR! Just let it fluff! Remove the lemons before plating.

Untitled design (15).jpg

Tuesday will be Taco Tuesday and this taco tuesday will be bowls or tortillas and we will keep it very simple for all! I will make rice using the recipe above minus the lemon. I will heat up a can of black beans and reheat some of the leftover chicken from Monday. I then will have each boy in my world build their bowl or tortilla like so: evenly distribute the chicken, rice, romaine lettuce, pico, black beans, guacamole, shredded cheese, and top with Cilantro, lime juice, and chopped jalapenos. So good and so easy!

Untitled design (16).jpg

Wednesday the Berry’s are going to have B for D! And I don’t know about your house, but my family digs this! This Wednesday we are going to have our Christmas morning casserole which everyone loves!

Untitled design (17).jpg

Thursday is a bit calmer so I think I will treat them to a meal Trey literally begs for all the time, especially the wasabi potatoes!!!!! Flank steak and wasabi mashed potatoes! So good and fairly easy!!!!

Untitled design (18).jpg

Friday and Saturday this kitchen is closed!!!!!

Simple Supper Suggestions (11).jpg

So that wraps up what we will be eating this week! What will you be serving? I can always use new and delicious ideas!

Until next time!

Amy

Wow! I was overwhelmed with the response on the meal planning! I had no idea how much people really liked it. Which is odd because before I started doing mine I was just like you watching other moms and using their recipes and their technique’s on planning. I remember thinking to myself one day, “I can do that! I know how to cook and I plan at the begining of the week, why don’t I do this for my readers?” So I started back in the spring and here I am back at it thanks to you guys…..AND I LOVE IT TOO! Nothing makes my heart swell more than knowing I am helping someone! So if you are that someone, thank you for fulfilling my dream of helping people’s lives become better, easier, or more fulfilled!

So back to what today is all about....Today I would like to try throwing out simple supper suggestions for you all. You can take what you like and leave the rest. I promise I will not get my feelings hurt. Point is every Saturday, Trey and I along with the boys sit down, or text if I am being honest, ideas for supper the following week. Simple Supper Suggestions #8

This week you will see alot of repeat recipes. Reason being it is the last week of school and I have let each kid in the family choose what they would like. I did this last year and it is just a way to provide comfort during exams and all the hustle and bustle. Truthfully speaking it is easier on me too because it is normally a meal that I make often so I know exactly what to do. Win, win if you ask me! They are happy and I am happy!

Monday-With it being Memorial Day I asked Trey what he would like. I figure he did serve in the Military for 20 years, it is the least I could do. He chose Steaks on the grill which is a huge win for me! The grill is his domain! Ha! So Monday I am off the clock, but we will have grilled steaks, simple green salad, and baked potatoes. Easy Peasy lemon squeezy.

Tuesday-Will’s pick of Steak Burrito Bowls. These are the perfect meal to double and eat on during the week for lunch or whatever.

I can’t believe this one will be a Senior next year!!!!!

Wedneday-JP’s pick of Chicken Feta. Again super easy and you can even make it super duper easy by going to the grocery and getting their whole chickens that are already roasted if you are crazy busy with end of year activities.

My sweet JP! No lie he requests this recipe EVERY week!

Thursday-Graeme’s pick. Spaghetti! And yes we will do it again! Everyone get’s a pick so it is only fair! And besides everyone loves spaghetti!

So take a look and see if you like what the Berrys will be eating this week and if you have any recipes you would love to share, I am all ears! I love trying new stuff and I would love to share your reciepes with the people! So send them on!

Monday-Amy’s Tortillia Soup This delicious recipe I got from my amazing neighbor Amy, I like to call her Pei Wei, and it is so good! I love making it on a Monday night for the family and eating on the left overs all week with a side of avocado! So good!

B for D (5).jpg

Tuesday-Chicken Feta This seriously is the number one request I get in my home! Every week I ask the boys, including Trey, what they want to eat. And as God is my witness this one is on it every week! Which drives Trey crazy because he is not the biggest spinach fan! But the kids LOVE this one!!!!!

IMG_1027.jpg

Wednesday-Lemon Chicken and Rice I was inspired by another blogger on this little ditty! It is so good that I am still dreaming about it and cannot wait to eat it again! You really should give it a go! It is one of those recipes that is not super simple, but it is so good and so worth the effort.

IMG_0970 (1).jpg

Thursday-Red Beans and Rice I love whipping this up on a Thursday because when I double it we can eat on it all weekend! Fun fact….Red beans and rice is so good as a left over after it has marinaded in all the things!!!!!

Simple Supper Suggestions #5

It’s May and I can see the light at the end of the tunnel! I can taste summer!!!!! Can you? Or are you bogged down with all of the end of school activities. We have a little of that going on as well so I really need the next couple of weeks to be super easy when it comes to feeding the kids. I hope I can help alleviate some of your stress with the following meals. They are all very easy and very delicious!

Monday-Marinated Cole Slaw-After a week of mexican food I think we will go a little all american on Monday. Here at the Berry house I will have Trey grill some hamburgers and I will make my delicious Marinated Cole Slaw and pair it with some grilled corn on the cob. Super easy and everyone is happy!

I tried broccoli in it last time and my kids were not fans….but I was! So if you like broccoli try it!

I tried broccoli in it last time and my kids were not fans….but I was! So if you like broccoli try it!

Tuesday-Primal Mom’s Tomato Mozzarella Salad This little salad is so good and easy. I really like it when I am coming off of a big week of heavy mexican food or out of the holiday food coma because it is super light and healthy.

IMG_0842.jpg

Wednesday-This week our B for D will be super easy. We will have eggs however the kids want them which means some will want scrambled with cheese and others will want over easy. I will pair it with bacon, toast, and maybe some bisquick pancakes. For my bacon, I like to heat my oven 375 and get a cookie sheet. Line it wth foil and spray it good. I fill that sheet with bacon and cook it for 30-45 minutes depending on how you like your bacon. It is so easy and clean up is quick and your hair does not smell of bacon! I am telling you, kids LOVE B for D! It is so funny too because it is so easy!

B for D (3).jpg

Thursday-Chicken Basil Pasta This dish is amazing and if you want to make it healthy you can use zoodle noodles, or spaghetti squash and you can use regular noodles for those who do not care for zoodles. My kids prefer regular so believe it or not I do it both ways and it is still easy. It is a very light and refreshing pasta and one we love.

Friday and Saturday I am off the clock!

Sunday-Spaghetti Sunday If you are new here then you do not know that Sunday Nights here are for friends and family! My house is always open for friends and family and I make spaghetti for whoever wants it. Why? Because it fills my heart and because my husband Trey and I have been doing Spaghetti Sunday since 1992! True story! Check it out and maybe you and your family will start your tradition!

B for D (4).jpg

So there are some simple ideas to get ya through the week!

What will be on your dinner table this week? I would love to have some new recipes to share!

Until Next Time!

Happy Monday! We are days away from May which do you know what that means? Days away from Cinco de Mayo, days away from end of school year activity hustle and bustle, and just a little closer to summer break!!!! Yee haw!!!! That is all I have to say! I LOVE SUMMER BREAK! I love the slow pace and I love the memories made! Who is with me?

But, we have to get through May to make it to the break! And let me tell ya…..when you have two high school aged kids in the house and an elementary aged child….well, put your seat belt on folks! It is about to get messy, busy, and stupid crazy, but there is a light at the end of the tunnel! And we mamas still have to cook and feed those kids! This week I have mexican themed dishes because some of you might have a Cinco de Mayo party or two to go to and most of these dishes you can bring along! So I thought I would kill two birds with one stone here! Hope you like what you see. I promise they are all very easy and very tasty!

Thursday-Mrs. Andrea’s Kings Ranch Chicken. When I make this I usually double or triple it and freeze the extra casseroles. It is super to have those ready in the event I have a friend in need or something pops up and I just can’t get dinner ready. Not to mention EVERYONE LOVES THIS DISH!
