Sausage Biscuits from Primal Mom

Homeschooling, cleaning, cooking, dancing….that is the story of my life these days, but with it has come some amazing recipes and ideas that will only make for smoother mornings when school does FINALLY re-open! Who knows when that will be, but know that I am making recipes to share with you to keep the kids healthy and you free of stress during the morning hustle.

Today I tried a recipe from my friend Amber’s collection. Amber is the amazing primalmom. If you do not follow her and you want to bring some goodness and health into you and your family’s lives, I highly suggest you do! She has ALL kinds of keto friendly, primal friendly recipes, and skin care ideas so I highly suggest you give her a looksie!

Today I made her Breakfast Sausage Biscuits. Now, I will say it is kind of messy, but the mess is so worth it! This recipe gave me about 16 paddies and 1-2 paddies is all anyone would really eat each morning, so you have breakfast for a week! It is so nice! And my boys all like to eat it a little differently. One likes it with Red Hot Buffalo sauce, one likes it on a biscuit or Hawaiian Roll which totally cancels the keto, and one likes it with Cholula sauce, but the point is they all LOVED them! So give this recipe a whirl and show my friend some love!

PRIMAL MOM’S SAUSAGE BISCUITS

INGREDIENTS:

2 lb ground sausage

2 cups almond flour

8 eggs

4 tablespoons butter

2 cups shredded cheddar cheese

2 teaspoons paprika

2 teaspoons pepper

PREP:

Preheat your oven to 350

Melt your butter in a microwaveable small bowl

In a large bowl, mix the melted butter, almond flour, sausage, eggs, pepper, paprika, and cheese. Knead the ingredients together. (This is where it gets a bit messy.)

Form sausage mixture into large patties. I simply made them look like hamburger patties.

Bake on 350 for 20-24 minutes, flipping halfway.

You can store all your extras in the refrigerator and when you want to eat one you simply reheat one in the microwave for 30 seconds! Makes for an easy and healthy breakfast and everyone is happy and healthy!

I mean to tell you this is AMAZING and I do not like iced coffee. Swear to God! But when I had this at one of my events, it was like Jessie with IV Nutrition described. It was like drinking melting chocolate ice cream. Can you say, “Get into my belly!”

It is super easy to make and when you add my secret ingredient you will not only have the benefit of a delicious iced coffee, but you will gain energy, mental focus, and it has a huge appetite suppressant in it! So if this sounds good to you or if you love iced coffee you should give this a try!

Ann’s Iced Coffee

1/2 cup almond milk

1/2 cup Stok Almond milk Cold Brew Mocha Coffee

1/2 scoop my revitalu coffee

1/2 scoop my revitalu cocoa

Blend with ice and top with whip cream and if you are really fancy drizzle chocolate or chocolate sprinkles! So good you will want it every morning!!!!!

1/2 cup of almond milk

Scoop of cakepop protein powder by PEScinece protein powder (Or whatever protein powder you have)

Hawaiian Rolls for Breakfast

If you have a house full of boys I have a little tip for you. Hawaiian Rolls are your friend! Always have them on hand! Trust me! You can’t go wrong with these little babies! I make sandwiches with them, use them as rolls with dinner, breakfast, snacks, whatever you want! My boys take them by the fistfuls and eat them as a snack! So word to the wise, with summer coming on, get these and keep them on hand. Trust me on this!

By now, most of you know my family loves B for D! Breakfast for dinner. So this past week I tried something and it was a hit and it was super easy! You could do these for breakfast, lunch, or dinner. They are packed with protein, but I will admit not so healthy! But when you have a house filled with growing, active, kids, I think it is ok. Just my opinion. If you don’t agree that is way ok. We can still be friends! Ha! I titled these babies, Hawaiian Breakfast Rolls. Hope your family enjoys them as much as mine did.

Hawaiian Breakfast Rolls

3 tablespoons Butter, divided

8 large eggs, beaten

1-2 tablespoons milk

1 12 oz package of Hawaiian Sweet Rolls, Split in half

12 slices of cheddar cheese maybe more if your family likes a lot of cheese

12 slices of lunch meat (I used honey ham)

Salt and Pepper for taste

Preperation:

Heat oven to 350 degrees.

Melt 1 tablespoon of butter in a skillet over medium-low heat and add eggs and milk. Scramble and cook the eggs and add salt and pepper to your liking.

Place bottom part of roll in a lightly sprayed 9 x 12 baking dish. Layer cheese, ham, eggs, and more cheese if you like. Cover with the top of the rolls.

Melt the rest of the butter and brush on top of the rolls and sprinkle with a little salt and pepper.

Cover pan with foil and bake for 15 minutes covered. Uncover and bake 5 more minutes or until cheese is nice and melted and your buns are crisp. Cut into little sandwiches before serving.

That is it! Super Easy and Super Good!

B for D is Always a Winner!

Here in the Berry house if I announce we are having B for D you would think I announced we won the lottery! It is like a real treat for the boys and I am really not sure why. But, I have decided I would start changing up what they expect and see if they like it. This past week I tried a different casserole. One I got from my dear friend Paige. I changed it up just a tiny bit, but the over all verdict was “HOME RUN BABY!” Per Trey and the boys loved it too! So this little recipe definitely will be going into the Berry dinner rotation.

Poblano and Sausage Casserole

Ingredients:

2 Poblano peppers

Olive Oil

1 pound ground sausage (You can use lean turkey sausage and make it leaner)

1 Onion (I got the box already chopped in the deli section)

1 Tablespoon chopped garlic from the jar

5 Egg Whites

4 Eggs

1/2 Cup milk (use skim if going leaner)

1/4 Cup greek yogurt

1 Teaspoon kosher salt

1 Teaspoon black pepper

1 Cup shredded cheddar cheese (use low fat if going lean)

4 Cups shredded hash browns

Prep:

Preheat oven to broil.

Cut your poblano peppers in half length wise and remove the seeds.

Coat the peppers in olive oil and place on a cookie sheet skin side up. Place under broiler for 10-15 minutes or until peppers are nice and charred. Remove from oven and let cool.

Take ovens temperature back down to 350 and lightly spray a 9 x 13 baking dish.

While peppers are cooling put about 1 tablespoon olive oil in a frying pan and place your onions and garlic in the skillet and heat them up until translucent. Once translucent add your sausage and brown your meat. Once your sausage is brown, drain your grease and set aside.

Remove the charred skin from your peppers and dice them up.

In a large bowl whisk your egg whites, your eggs, milk, yogurt, salt, and pepper. Whisk it until the lumps are out. Add your sausage, chopped peppers, cheese, and hash browns and mix well. Make sure all hash browns are coated in the mixture.

Pour into your casserole dish and bake for 1 hour covered with foil. Uncover and bake for an additional 10 to 15 minutes or until top begins to brown. Let cool.

Serve with avocados, tomatoes, and salsa!
