Unforgettable Flank Steak, Wasabi Mashed Potatoes, and Green Salad

Need an idea for dinner? I have one that the entire family will love! Steak, potatoes, and salad! Check it out!

Do you ever have those days when you just cannot think of anything to make? Happens here all the time as I have three boys who love to eat and a husband who is LITERALLY a human garbage disposal when it comes to food. The man loves his food and when he is fed something he LOVES he NEVER forgets it.

Back to the point- I just could not come up with any dinner ideas. I asked Trey what he felt like and he literally said, "Call Jen Clifton and get that recipe from when we ate at their house." I looked at him and asked, "Are you serious? That was like over a year ago and I know this because she has had a baby and it was before she was pregnant!" He was serious yall! He remembered that it was flank steak and wasabi mashed potatoes! I was like dang! Impressive! So of course I called Jen and the rest is history! 

So today's blog is literally an entire meal! I am happy to report it is pretty darn easy to make and it VERY delicious! So delicious my husband my remembered it 20 months later! Give it a whirl and let me know what you think.

Flank Steak, Wasabi Mashed Potatoes, and Green Salad

I used 1lb flank steak

Marinade:

1/4 cup Coconut Amino Acids or Soy Sauce (I prefer the Amino Acids as a substitute)

2 Tablespoons brown sugar 

Ground fresh Ginger and I did this to taste for my family so I used 1 Tablespoon your family might want more.

I also added 1 garlic clove, minced because we put garlic on darn near EVERYTHING in this family.

Combine all that in a baggie and let it marinade all day or overnight if you can, but at least for 30 minutes.

Grill until desired doneness. Let stand, covered loosely with foil for 10 minutes, before cutting in thin strips against the grain.

Wasabi Mashed Potatoes:

2.5 to 3 Lbs of Russet potatoes 

1/2 cup butter

4 ounces of cream cheese, softened

1/4 to 1/2 cup half and half

1/2 teaspoon Lawrys Seasoned Salt

1 teaspoon black pepper

Wasabi cream Sauce

Prep:

Peel your potatoes and place in pot of boiling water. Boil for about 45 minutes or until you can slide a knife through the potato.

Drain water and add butter, cream cheese, cream, salt and pepper. Mash and blend well. Once smooth add as little or as much wasabi as you like for taste. We like a lot, but some people are sensitive. I did about 2 Tablespoons maybe more.

Salad:

Romaine Lettuce

6- 10 Green onions chopped

1/2 to 1 cup Chopped Broccoli blanched or raw

Raman Noodles crushed up and toasted in butter

Walnuts toasted

Toss all of the above together.

Salad Dressing:

1/2 cup of Vegetable Oil

1/4 cup sugar

1/4 cup red wine vinegar

2 Tablespoons Coconut Amino Acids or Soy Sauce

Blend all together and pour over your salad and toss well.

There you have it. An entire meal and one that people will surely remember! My husband is proof of that!

Easy and Quick Carbonara

Easy and Quick pasta recipe with bacon! Yes Please!

It's officially summer here as our youngest son is out of school. With that comes long summer days in the sun and lots of kids coming and going at the Berry house. I try to get dinner on the table by 6:30 during the school year, but when summer hits.....forget it!  I am lucky to make it happen by 8:00 and that is only if it happens. So I am always looking for easy quick recipes or making up easy quick recipes. I did just that last week with the following recipe. 

I was in the mood for something with bacon and Graeme wanted pasta so I combined the two and made my own version of a carbonara. It turned out pretty good and everyone was pleased. Including me as it was super easy and I got my bacon fix! Give it a whirl and let me know what you think and while you are at it, if you have any recipes I could try I would love to try them and share them! 

Carbonara

Ingredients:

1 Package of pasta uncooked  (I used the thin pasta in a box)

Bacon (I used 10 slices)

2-3 Tablespoons crushed garlic from the jar or 1 garlic clove crushed

1/2 cup chopped green onions

1-4 ounce can of mushrooms, drained

3 egg yolks, lightly beaten

1.5 cups finely shredded cheddar cheese

Salt and pepper to taste

Prep:

Preheat oven to 375 and place your bacon on a cookie sheet and cook on 375 for 20-30 minutes until bacon is cooked to your liking.  Crumble bacon and set aside.

Save the grease from the cookie sheet.

Boil your water for your pasta while bacon is cooking and cook your pasta according to the package directions.

In a large skillet place 2-4 tablespoons of your bacon drippings and saute your garlic for about 2 minutes over medium heat.

Add your green onions and mushrooms and cook for about 2-3 minutes. 

Drain pasta, and place in big serving bowl.

Stir egg yolks into hot pasta immediately after draining it.

Stir in bacon, garlic, green onions, cheese, salt and pepper: toss.

Serve immediately with a green salad and garlic bread.

Easy Peasy and so good!

Amy's Tortilla Soup Modified for This Amy's Tastebuds

My neighbor Amy might be one of the coolest cats in the world.  She always seems to have her head on straight and is always there to be my sounding board when I feel like I am about to jump off a cliff.  That my friends is a great friend and she is my neighbor!

My neighbor Amy might be one of the coolest cats in the world.  She always seems to have her head on straight and is always there to be my sounding board when I feel like I am about to jump off a cliff.  That my friends is a great friend and she is my neighbor!  How lucky am I?  To top it off the girl can cook and she is not afraid to try new things!  When she made this tortilla soup once- I was like I have to have that recipe!  Unbeknownst to her, I changed a few things and you guys can too!  That is what is so amazing about this recipe; you can add or take away whatever your family's likes or dislikes are and the end result will be the same!  Delish!   Give this recipe a whirl and let me know how you like it!  

Amy's Tortilla Soup-kind of!

Ingredients:

1 tablespoon Avocado Oil or Olive Oil

1 Cup Chopped onions or as much or little as your family likes

3 garlic clove minced or 2-3 tablespoons of jarred minced garlic

1/4 of a jalapeno chopped 

3/4 cup chopped really good cilantro (word of advice, cilantro is tricky. People love it or hate it.  If you are making for a group of people that you do not know their thoughts on cilantro don't use that much.  You will notice in my photo below I just use a little.  If I am making for my family I use 3/4 cup for sure, but for friends, I only use a little.) 

1/2 teaspoon oreagano

1/2 teaspoon cummin

8 cups at least, I like more of Chicken Stock

1/2 a beer

2 cups chopped chicken breast (I just buy a whole roasted chicken cooked at the store and shred it)

1 bag of frozen corn

1 cup of COOKED rice

1 1/2 zucchini sliced 

1 can of rotel tomatoes ( I like the one with cilantro and lime for this recipe)

 

lawry's season salt for taste

Prep:

Heat your oil and add your onion and garlic and saute a minute or two.  

Then add your jalapeno and cilantro and saute for a few more minutes.

Next add your spices and saute a little longer.

Then add your chicken stock, beer, vegetables, chicken, cooked rice, and more lawry's for taste.

Let simmer for at least 30 minutes longer is better.

Top with your toppings of choice.  Some ideas include:

Avocado, Shredded Cheese, Jalapeno, Sour Cream, Cilantro, and Tortilla Chips.

What's for dinner

With Thanksgiving right in front of us followed by all the Christmas parties and Christmas, I really need to be watching what I eat.  Here is a quick and healthy recipe that I think you and your family will enjoy!

With Thanksgiving right in front of us followed by all the Christmas parties and Christmas, I really need to be watching what I eat.  I tried another Primal Mom recipe and my family LOVED it!   I did it a little differently than she does, simply because I hate cooking meat on my stove in a pan, so I tried baking our chicken and it was amazing!  You should try it too!  It is super easy and very fresh and delish!  You can also make each kid's plate right to their liking which is always great in this house!

 

PRIMAL MOM TOMATO MOZZARELLA SALAD

INGREDIENTS:

4 Chicken Breast

grape tomatoes (you will plate these and can use however many each person desires)

2 cucumbers or more if your family loves cucumber

1 Tablespoon Dried Basil

1 Tablespoon Dried Parsley

2 Tablespoons real Kerry Gold Butter

4 Cups Mixed Greens or more if you have a lot of rabbits at your table

1 Cup Pistachios

Mozzarella

Salt and Pepper

INSTRUCTIONS:

First step in baking the most delicious chicken is brining it.  Yep you heard me.  I always brine my chicken.  It is so easy too.  Just fill a large bowl with warm water and salt and let the salt dissolve.  Add your chicken and let it sit there for 15 minutes.  I have been known to put mine in the frigelator for 6 hours and it is unbelievable! 

Next cut the chicken breast in half.  Melt your butter in a bowl and add your basil and parsley and brush over your chicken.  You can then salt and pepper to your liking. 

Now I like to cook my chicken on high, but you do what your family prefers.  I preheat my oven to 450 degrees and cook those babies for about 18 minutes or until the chicken is fully cooked (160-170 degrees F).

While the chicken is cooking you can cut up your tomatoes, chop your cucumbers, and cut up your mozzarella into chunks.

When all is done you will evenly plate each plate with the greens.  Top each with the chicken, tomatoes, cucumbers, pistachios and cheese. 

And if your family is like mine, some will get greens, some will not.  Some will get tomatoes some will not.  Each plate you can build however you heart desires.  

Such a fresh and healthy meal that has something for ALMOST everyone!

Ju Ju's Taco Soup

It's Fall Y'all!  Who doesn't love a warm bowl of soup?  This soup is from Graeme's God Mother, a.k.a. Ju Ju, and as Graeme Berry says, "Happiness in Ju Ju's soup!"  

It's Fall Baby!  Time for the leaves to fall, the weather to change, and time for SOUP!  I love me some soup y'all!  And Ju Ju's taco soup is just the thing I needed to welcome in brisk cool air of fall!  I love it!!!!! I think you will too!  Give it a whirl and let me know your thoughts!  I bet it makes you Happy!

Ju Ju's Taco Soup

Ingredients:

1 Lb Ground beef,  Olive Oil, Onion, garlic, 2 cans ranch style pinto beans (my family prefers one with Jalapeños  and one without) 1 can corn, 1 can chopped green chilies, 1 package of ranch dressing, 1 package of taco seasoning mix, 1 can of stewed tomatoes or 2 can’s of rotel. If you do 1 can of stewed tomatoes then use 1 can of rotel (I prefer the one with lime in it) and we prefer 2 cans of rotel because the tomatoes are chopped up better. 1 can of water and 1 beer of choice (and no it is not to drink!). Pepper and Lawrys season salt.

Place 1 tablespoon of Olive Oil in a big pot, Throw in one chopped onion and as much chopped garlic as your family would like.  Let those soften a little then throw your ground beef in and brown. Next dump every can in and do not drain.  Throw in your seasoning packets and as much salt and pepper as your family would like for taste.  Add your beer of choice and one extra can of water and let it simmer.

When you go to serve garnish with Shredded Cheese, jalapeños, sour cream, and chives and serve it up with a nice slice of cornbread!  Oh so Good!
